Mango & tomato salsa


  • 6 medium tomatoes
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 1 large mango, halved, peeled, seeded, chopped
  • 2 tbsp chopped fresh cilantro
  • tortilla chips to serve


  • Place tomatoes into a large bowl, cover with boiling water, letting sit for 1 min
  • lift out and pierce skin with a knife and peel
  • cut tomato into quarters, then cut out central core and seeds
  • chop remaining flesh and put into a bowl
  • heat oil in a skillet, and sizzle onion until softened
  • add the onion to the tomato bowl
  • mix in mango and cilantro
  • salt and pepper to taste
